お米は大事。精米、玄米、そして糠 |
★ 田舎に住む特権の一つは、毎日の主食、お米です。地元産の良質の玄米を30キロ単位で購入し、保存庫にストックして、必要に応じて精米し、すぐ料理します。それがコメのおいしさを引き出すコツです。都会では無理ですね。
★ それだけではありません。その副産物である米ぬかは、ぬか漬けにも用いますが、そう多量には使いません。だから精米ごとに、花壇や、家庭菜園に撒いて来ました。土作りのつもり。でも・・・と、最近、気になってしかたありません。米ぬかは、タンパク質、ミネラルやビタミン類も豊かで栄養の宝庫です.
★ 昔は、多くの女性がお化粧に使っていました。例えば、私の母親は、袋に詰めて石鹸代わりにしていました。時々、木綿布の袋が浴槽に浮かんでいて湯が乳白色になっていたのを思い出します。
★ 食糧難の時代になると、米はなくても、米ぬかは手に入りました。先の戦争の時代、1943年から1947年にかけてですが、日本は深刻な食糧難に陥りました。その頃、米糠を炒って作った料理を食べたこともあります。味はともかく栄養の塊。それで命を繋いだ、との思いもあります。
★ 私の祖父は常に私を次のように教えました。日本語漢字の「米」の形は、「八十八」に分解できます。つまり数字の88を意味します。祖父は、これを解釈して、
「お米は、お百姓さんの、八十八の苦労が生み出したもの。だから粗末にしてはならぬ」と教えました。
★ お米は日本人の命です。精米も、玄米も、そして糠も、すべてを大事にしましょう。特に糠は栄養の宝庫です。
